I recently saw the above shared on social media, and instantly felt like an incredible human being, winning at both life and parenting… I’m not the only person that breaks into a cold sweat every time baking is suggested!
All I could focus on today was the fingers and tongues all through it *shudder*
So I’m sorry I’m not the perfect Instagram/Pinterest baking mum – or if all illusions you held of my top notch parenting have been smashed to pieces – I’m just a mum, sitting in front of 100 different shaped/sized cookies that are super soggy from being squashed with a wet fork that many times, asking if it is beer o’clock yet.
Anyhoo, for todays exercise in torture we made the ‘100 cookie’ recipe – this recipe is supposed to make around 100 cookies in one batch, and therefore I think I should be out of having to bake for at least the next 6 months. For those of you with delicate OCD tendencies, look away now, because the state of these cookies will make your eye twitch
1 cup sugar
500 grams butter or margarine
1 tin sweetened condensed milk
5 cups self raising flour
Today for the first time we used margarine instead of butter – simply because I had no butter and had 2 brand new containers of marg, so I was not going back to the supermarket with 2 kids just for butter (supermarket shopping with kids, another horror story for another time). Once cooked you don’t really notice the difference, but cooked shmooked, I’m only here to eat the cookie dough – so if you are all about the dough like I am, then I suggest you use butter, it tastes way nicer.
I guess you’re supposed to cook them for around 10-12 minutes, but look at the state of ours, some took 5 minutes to cook and some took 15 minutes to cook, baking with kids, yaaaaaaaaaaaay……
Mix all the ingredients together, and then you can separate it out into smaller batches and add whatever you fancy – some suggestions 100’s & 1000’s, mini m&m’s, chocolate chips, peanut butter, milo, apricot bits – or whatever your heart desires in a cookie
Today we used mini marshmallows, I would not recommend this – the marshmallows all melt and disappear leaving a holey cookie!
I flatten out all the cookies and freeze them as above in between layers of baking paper – this way you just take them out of the freezer one by one when you need and cook them straight from frozen.
Great for when you’re needing a lunch box filler, or when visitors pop around
